ZINFANDEL A classic Dry Creek Valley / Bradford Mountain Zinfandel. Dark ruby in color, with jammy ripe dark cherry and blackberry fruit, and white pepper and vanilla spice. It is a full-bodied, elegant wine with soft, supple tannins and concentrated flavors that produce a rich lingering finish. It was made the old fashioned way -- cold soaked and then fermented in small open-topped bins. This approach contributes to the expression of the wine's unique terroir. The Cabernet Sauvignon vines are cane-pruned and trellised for vertical shoot positioning. The grape yields from both varietals are low—less than two tons per acre. The grape berries are small and the skins dark at harvest with around 25%-30% Zinfandel, and 10%-15% Cabernet Sauvignon, showing signs of "pruning". These growing conditions produce highly concentrated flavors, dark ruby hues, and good “structure” from ample and well-balanced acid and tannins. CABERNET SAUVIGNON |
